My dear friend from South America is the most wonderful homemaker! She makes a "base" and all their meals throughout the week use this base. On Friday she throws whatever leftovers are in the fridge from that week into a soup. I saw it w/my own eyes and tasted it... amazing! It had mashed potatoes, rice, noodles, just every left over dinner dish dumped right in! She taught me how to make the base.
Recipe:
3 carrots
3 yellow squash
3 zucchini
3 medium onions
3 multi color peppers orange, red, green, yellow
3 stalks of celery
@ least 1/2 cup of garlic
just under 1/2 olive oil
sea salt, pepper, soy sauce, Tony Chacheres, garlic powder
Wash vegetables and then pulse them in a food processor.
I like mine chunky.
If you are trying to hide the vegetables from suspicious children you can process them completely. In a large stew pot cook the olive oil & onion for about 3 minutes, then add the garlic & cook for another 3 minutes, add the rest of the vegetables and seasonings and cook until tender. Let cool and put in containers to freeze! Put one container in your fridge.
Now, whatever you are cooking for dinner add 1/2 - 1 cup of the base to the sauce: lasagna, Hawaiian haystacks, spaghetti, soup, etc. One of my FAVORITE ways to use the base is in my morning eggs. I cook 1-2 heaping tablespoons 4 egg whites. It's absolutely delicious!
